I'm making homemade pizza - the pizza we only eat during Ramadan, the one that once you eat it in Ramadan, you forget about it afterwards.
 
We'll make it from dough to sauce using my famous Fordeal mixer that kneads and rises with complete simplicity.
 
250 grams flour equals one and a half cups
25 grams milk powder equals quarter cup
20 grams sugar equals one and a half tablespoons
One tablespoon instant yeast
 
Mix them without adding any liquids. Open the lid and add 150ml milk, and you can increase it to 170ml depending on the flour type. Close it and knead for 15 minutes.
 
After a quarter hour of kneading, open the top lid and add a tablespoon of oil, add a pinch of salt and knead for an additional 5 minutes.
 
Let's see the result - soft and cohesive. Put it back in the mixer, remove the hook, close it again, turn on the rising system and let it rise for half an hour.
 
While the dough is rising, let's make the pizza sauce:
 
Some olive oil, about one and a half tablespoons
Add finely chopped onions, one and a half onions
Peeled tomato can with juice - mash it in the pan because it has pieces
Add a full tablespoon of tomato paste
One tablespoon ketchup
I don't know, mothers say this is a mother's recipe that you must stick to:
 
Two garlic cloves
Pinch of oregano
Dried basil
Black pepper
Salt to taste
The smell is natural and I've prepared the best sauce!
 
After the dough has risen, put it on the table and let it rest for ten minutes. After ten minutes, put it in the tray and spread it out.
 
Add sauce, onions, peppers, mushrooms, olives, tomatoes, mozzarella cheese, and add cheddar cheese - just go easy on the cheese!
 
Into the oven from top and bottom at the highest temperature, second rack from the top.
